BUSHI® calls this “Hana Sakura 桜舞(aube).”

Aube” means “dawn” in French, signifying the dawn of a new texture— freshly shaved bonito with an entirely unique sensation.

Bonito flakes are said to be the hardest fermented food in the world. It was developed based on the concept of “shaving thinly in a natural way.” The highest hardness (honkaerebushi) is 6 to 7 on the Mohs scale. It seems to be on the same level as quartz and jade.
